I saw it, and I will run through the language usage that Solo likes and has become pretty much standard... mostly just reigning back on plural pronouns when singular will work. Thinking of making a monster that is a mix between an elephant abd a dragon (inspired by a picture I saw at a restaurant for kids to doodle on and some added really cool dragons wings and such to it).
Question is how many HD should it be? I was thinking somewhere between 8 and 12, just not sure is all.

Just as many as you think are right. An elephant has 9HD so you can use it as a base, but if you feel that between 8 and 12 are a good amount then use that range.

A monster of the savannahs and low hills of the south and east, the Dragophant is some foul mixture of dragon and elephant. Some legends speak of a vile experiment, others saying that some tribe angered the ancestors or gods. Where they came from matters little.
Though rare, these beasts often travel in small groups dominated by an alpha male. Agressive and fairly mean-spirited, they appear not to be as intelligent as a dragon, incapable of speech or spell, but cleverer than the typical dragon. Groups tend ot surround whoever the alpha is attacking and will not stop attacking until the foe is defeated.
Like their dragon bretheren, Dragophants often have treasures, adorning themselves haphazordously with shiny baubles and such.
