Usually they just have the armor class and attack bonus. For saving throws, you often use the same numbers as for a fighter of the same level. One thing to consider as well: would NPC opponents and monsters get the same damage dice. That would make things much more lethal for the party as well. Maybe another option would be to JUST give fighters the damage dice at certain levels (maybe 5 and 10, depending on how long your campaigns run). A...

I've used CON score as starting hp, then go from there.
Alternatively, start them at level 3.
All that said, I recently played a Magic User with 4 hp. She hid behind a child during one of the battles.
Not my proudest moment, but she made it. The kid did too.
