It can be made both ways.. my mom used to push it through the noodle maker but as she got older it became harder so she started using the knife method..

I know of what you speak. I have relatives in the northeast who observe such traditions. I have heard many wonderful things about Spaetzle, but sadly, I have never gotten to try it.
